Dalleth means “origin” in Kernewek (Cornish). For Jonathan it is a personal interest — how people have always eaten, and a quiet love of home on these islands. He cooks and serves the same day. The venue needs a kitchen you can work in.

The tasting borrows its shape from kaiseki, because that way of plating and pacing suits a long meal: calm courses, the right thing in season. What he likes to put on those plates is the story of the British Isles — prehistoric ground, the land before the ice, Iron Age and after — sometimes one stretch of time held whole, sometimes a walk from stone to now.
